Healthy Snacks: Corn and Cucumber Salad with Avocado Milk Shake
You know that moment, when your child comes home from school to say he isn’t hungry but you know that he needs something to revive him. He wants a refreshing snack that will give him enough energy to last him till supper time. You are afraid he will reach for a bag of chips or whatever he can get his hands on. Do you run out of ideas for healthy snacks for kids too? I am sharing with you today a quick fix, yummy salad recipe and a delicious drink!
Our perfect late afternoon snack: Corn and cucumber salad with avocado milk shake. It is my ‘bowl of happiness’! I love to place it on the table after school and we love to chit chat about the day over it. If the little ones are up then they join us too. My 18 month old loves to pick out all the cucumbers from it.
It is really quick to make and it is filling. For some reason, it feel so satisfying. Kids love corn and cucumbers and the avocado shake is so smooth and creamy that be sure that they’ll ask for a second fill. Taste-wise, I love the sweetness of the corn coupled with the crunchy cucumbers. Depending on what kind of onions you use, the recipe takes on its own unique flavor. The red onions give it a tart almost spiced up taste but if you use white or pink ones (shallots even), then they give a little more sweetness to it. The addition of the lemon juice just brings the whole salad together and blends in all the flavors into a whole bowl of deliciousness! Can you tell I love love this salad a bit too much?!
It is one of our very quick and easy recipes that we try almost every other week. The best part is that it is so easy that you can very easily involve kids in to it. Yes, definitely a recipe kids can make! We have made these at parties with kids too. Here are the recipes for you to try:
CORN AND CUCUMBER SALAD RECIPE:
What you need:
- Corn -One can (340gm) drained
- 1 Cucumber diced
- One small onion (white for sweetness or red if you like a little hot)
- Juice of half a lemon
- Cilantro (optional)
- Salt to taste
Mix it all well. It tastes better if chilled but you can eat it at room temperature too. This can be made ahead as it tastes better after a few hours of absorbing the lemon juice.
AVOCADO MILK SHAKE RECIPE:
What you need:
- 1 overly ripe avocado- pitted and scooped
- 2 glasses of chilled milk
- Sugar to taste ( or replace milk and sugar with Vanilla ice cream!)
Put it all into a blender and blend till it is smooth.
